    Ingredients 900g skinless chicken 3 tsp tomato puree 50g garlic 50g ginger 4-6 green chillies 1 tsp turmeric 100ml plain yogurt 2 tsp tandoori masala 1 tsp salt Method For the marinade, add spice mix, yogurt, tomato puree, spices, garlic, ginger and green chillies Liquidize in a blender.   • Scones
    Ingredients 350g self-raising flour 85g butter Pinch salt 175ml milk 1tsp baking powder Beaten egg or milk (to brush on scones before baking) Squeeze lemon juice (to sour the milk, optional) 1tsp vanilla extract Savoury 60-80g chopped onion, grated cheese Seasoning (pepper, etc) Sweet 20g castor sugar Seasoning (cinnamon, nutmet, paprika, etc) Method Work the butter, flour and dry seasonings with the tips of your fingers to make consistent crumbs Lightly mix in the other dry ingredients Mix in the liquid (with a spatula), and put on a flour-dusted surface Roughly form the dough in to small balls (to fit easily in one hand) Flatten slightly on a baking dish and brush with egg or milk Bake at 200c until golden brown (~20 minutes)

  • Okonomiyaki
    Ingredients These are for one person; multiply for more: 100g Cabbage 1 Egg 50g self-raising flour 50g Water Pinch dashi powder 1tbsp soy sauce (optional) Method Finely chop the cabbage Mix cabbage and flour Mix dashi, water and eggs and mix with cabbage Prepare thick pancakes (~2cm thick) Top with cheese, bacon, mochi Cook on medium heat in a frying pan with a little oil until golden brown Turn over and cook until cheese and/or bacon are crispy Add dried seaweed, chopped spring onion and/or flaked or powdered bonito flakes, and a drizzle of mayonnaise, okonomiyaki sauce to taste.     Basmati Rice Ingredients 250g Basmati rice Pinch of salt Butter Method Wash 250g Basmati rice thoroughly Soak for 20 minutes for softness Add 2 pints of slightly salted water Boil for 10 minutes Drain Place the rice into a serving bowl Mix in a knob of butter to prevent the rice from sticking Pilau Rice Ingredients 250g Basmati rice 425ml water Onion 1tsp cumin seeds (roasted) 1tsp garam masala 1tsp salt Method Wash the 250g of Basmati rice thoroughly Soak for 20 minutes Fry thinly sliced onion until lightly brown Add 1tsp roasted cumin seeds (dry-roasted for 2-4 minutes) Add 1tsp garam masala and 1tsp salt Add the rice and stir for 2 minutes Add 425ml water, bring to the boil and cover with a lid Simmer for 10-15 minutes on low heat, stirring occasionally until the water is fully absorbed Do not stir too much as the rice will go mushy Remove from heat and allow to stand without removing the lid for 5 minutes, then serve

    Ingredients 750g boneless chicken 5 tbsp olive oil 400g tinned tomato 2 onions (medium) 25g garlic 25g ginger 2 green chillies 1 tsp chilli powder 3 tsp garam masala 2 tsp turmeric 1 tsp cumin seeds 1 tsp coriander seeds 1 tsp salt (to taste) Coriander leaves Method Wash all raw ingredients.     Ingredients 225g chappatti flour (wholemeal flour) 175 ml water Method Add the flour to a mixing bowl Add water slowly while blending in with fingers Mix the flour and water into a dough (pliable enough to roll out into a round flat shape the size of a tea plate) Cover with a slightly damp tea towel for 15 minutes Knead for 2 minutes Place in a covered container until ready to use Cooking the chappattis: Make a ball of dough (size of a large egg) on a lightly dusted board Pre-heat tawa (flat griddle) on a medium flame Roll the dough ball thinly to about 15cm, adding flour to prevent sticking Place chappatti on the tawa When bubbles can be seen on the surface, turn over When brown splits appear on the underside, flip over again.
