  • 350g self-raising flour
  • 85g butter
  • Pinch salt
  • 175ml milk
  • 1tsp baking powder
  • Beaten egg or milk (to brush on scones before baking)
  • Squeeze lemon juice (to sour the milk, optional)
  • 1tsp vanilla extract


  • 60-80g chopped onion, grated cheese
  • Seasoning (pepper, etc)


  • 20g castor sugar
  • Seasoning (cinnamon, nutmet, paprika, etc)


  • Work the butter, flour and dry seasonings with the tips of your fingers to make consistent crumbs
  • Lightly mix in the other dry ingredients
  • Mix in the liquid (with a spatula), and put on a flour-dusted surface
  • Roughly form the dough in to small balls (to fit easily in one hand)
  • Flatten slightly on a baking dish and brush with egg or milk
  • Bake at 200c until golden brown (~20 minutes)
