Scones
Ingredients
- 350g self-raising flour
- 85g butter
- Pinch salt
- 175ml milk
- 1tsp baking powder
- Beaten egg or milk (to brush on scones before baking)
- Squeeze lemon juice (to sour the milk, optional)
- 1tsp vanilla extract
Savoury
- 60-80g chopped onion, grated cheese
- Seasoning (pepper, etc)
Sweet
- 20g castor sugar
- Seasoning (cinnamon, nutmet, paprika, etc)
Method
- Work the butter, flour and dry seasonings with the tips of your fingers to make consistent crumbs
- Lightly mix in the other dry ingredients
- Mix in the liquid (with a spatula), and put on a flour-dusted surface
- Roughly form the dough in to small balls (to fit easily in one hand)
- Flatten slightly on a baking dish and brush with egg or milk
- Bake at 200c until golden brown (~20 minutes)
