Indian Rice
Basmati Rice
Ingredients
- 250g Basmati rice
- Pinch of salt
- Butter
Method
- Wash 250g Basmati rice thoroughly
- Soak for 20 minutes for softness
- Add 2 pints of slightly salted water
- Boil for 10 minutes
- Drain
- Place the rice into a serving bowl
- Mix in a knob of butter to prevent the rice from sticking
Pilau Rice
Ingredients
- 250g Basmati rice
- 425ml water
- Onion
- 1tsp cumin seeds (roasted)
- 1tsp garam masala
- 1tsp salt
Method
- Wash the 250g of Basmati rice thoroughly
- Soak for 20 minutes
- Fry thinly sliced onion until lightly brown
- Add 1tsp roasted cumin seeds (dry-roasted for 2-4 minutes)
- Add 1tsp garam masala and 1tsp salt
- Add the rice and stir for 2 minutes
- Add 425ml water, bring to the boil and cover with a lid
- Simmer for 10-15 minutes on low heat, stirring occasionally until the water is fully absorbed
- Do not stir too much as the rice will go mushy
- Remove from heat and allow to stand without removing the lid for 5 minutes, then serve
