Indian Rice

Basmati Rice

Ingredients

  • 250g Basmati rice
  • Pinch of salt
  • Butter

Method

  1. Wash 250g Basmati rice thoroughly
  2. Soak for 20 minutes for softness
  3. Add 2 pints of slightly salted water
  4. Boil for 10 minutes
  5. Drain
  6. Place the rice into a serving bowl
  7. Mix in a knob of butter to prevent the rice from sticking

Pilau Rice

Ingredients

  • 250g Basmati rice
  • 425ml water
  • Onion
  • 1tsp cumin seeds (roasted)
  • 1tsp garam masala
  • 1tsp salt

Method

  1. Wash the 250g of Basmati rice thoroughly
  2. Soak for 20 minutes
  3. Fry thinly sliced onion until lightly brown
  4. Add 1tsp roasted cumin seeds (dry-roasted for 2-4 minutes)
  5. Add 1tsp garam masala and 1tsp salt
  6. Add the rice and stir for 2 minutes
  7. Add 425ml water, bring to the boil and cover with a lid
  8. Simmer for 10-15 minutes on low heat, stirring occasionally until the water is fully absorbed
  9. Do not stir too much as the rice will go mushy
  10. Remove from heat and allow to stand without removing the lid for 5 minutes, then serve
