Basic Korma Sauce
Ingredients
- 3 tbsp olive oil
- 200g tomato
- 1 onion
- 25g ginger
- 25g garlic
- 200ml coconut milk
- 0.5tsp garam masala
- 2tsp coriander
- 2tsp cumin
- Salt to taste
Method
- Heat oil and add onions until translucent
- Add garlic & ginger and stir constantly - add water if dry
- Gradually add spices
- Mix well for 5-7 minutes, then add tomato
- Add other ingredients (chicken / vegetables)
- Reduce heat, cover and simmer for 20 minutes
- Add coconut milk and simmer for 10 minutes
- Stir every 5 - 10 minutes
